Chef/owner Kevin Nashan uses a Nicaraguan variety of beans from local Sump Coffee to make a dashi for this seafood special. A sumptuous coffee and shellfish liquor binds together a shellfish ragout made with geoduck, razor and surf clams, firefly squid and baby calamari that is served with roasted monkfish and monkfish liver tortellini. Nashan says the berry notes of the coffee nicely balance the fruit of the sea, also known as the shellfish.
