Vegan celeb chef Tal Ronnen updates a Greek classic, spinach- and feta-stuffed spanakopita, with kale and almond ricotta cheese. The kale comes from a grower 100 miles north of the restaurant, and Ronnen loves using it because the hardier texture holds up better than spinach while cooking, and it brings a deeper flavor as well. The dish is garnished with harissa-spiced smoked tomato fondue and mint oil.
